1 large ripe pineapple
2 country-style pork ribs
1 lb. thick-sliced bacon
¼ cup pork seasoning
Cut off the top and bottom of the pineapple. Slice off the skin and cut pineapple in half vertically. Remove core.
Season all sides of the ribs. Stuff ribs into pineapple halves. Place pineapple back together and wrap in bacon. Secure with toothpicks.
Grill pineapple at 275 degrees for 4-5 hours or until the internal temperature reached 160 degrees F.
Rest for 10 minutes before serving.
