What’s Cookin’?: Mexican Cornbread

Ingredients:

  • 1 1/2 lbs hamburger (browned and drained)
  • 1 can cream style corn
  • 1 cup cornmeal
  • 1/2 cup bacon grease
  • 2 eggs
  • 1 cup milk
  • 1/2 teaspoon baking soda
  • 1 can of jalapenos (diced)
  • 1 large onion (diced)
  • 1 lb. cheddar cheese (shredded)

Instructions:

  1. Mix corn, cornmeal, grease, eggs, milk, and soda and set aside.
  2. Preheat oven to 350 degrees.
  3. Pour 1/2 of liquid in a 13×9 pan.
  4. Layer hamburger, peppers, onion, and cheese.
  5. Pour remaining liquid on top.
  6. Bake for 50-60 minutes
