What’s Cookin’?: Mexican Mayocoba Beans


  • 1 pound Mayocoba Beans
  • 1 can diced tomatoes or 1 fresh tomato, finely chopped
  • 1/2 pound finely diced smoked bacon ( smoked hocks, other smoked meat can be substituted
  • 1 large Vidalia onion, coarsely chopped


  1. Combine ingredients into pot, simmer on low to medium heat for several hours.
  2. Add water as needeed to prevent scorching.
  3. Maintain as ‘soup’ consistency until final half hour, then let thicken a bit.
  4. Add coarse fresh ground pepper and salt to taste.


Mexican Grilled Pork Steak

Ingredients for Rub

  • 2 tablespoons ground cumin
  • 2 tablespoons chili powder
  • 2 tablespoons paprika
  • 2 tablespoons dried oregano
  • 1 tablespoon garlic power
  • 1-2 teaspoons cayenne pepper


  • Mix ingredients for rub.
  • Brush pork steaks with oil and sprinkle on rub 30-60 minutes before grilling.
  • Grill pork steaks until desired with nice sear marks.


Chorizo Potatoes


  • 6-8 potatoes boiled, cooled, and diced
  • 1/2 pound to 1 pound chorizo sausage (if in casing, remove)
  • 1 large Vidalia onion, coarsely chopped
  • Cooking oil


  1. Saute onion in oil in large fry pan.
  2. Add chorizo and cook just until done, breaking up sausage with spoon.
  3. Add potatoes to the mixture, stir and heat through
